Perfect Rolls!

On Saturday I made my first batch of white sourdough rolls. I only made 16 of them, because I was using a bread-machine recipe and\’c3\’82\’c2\~makes\’c3\’82\’c2\~two pounds, max.\’c3\’82\’c2\~On Friday\’c3\’82\’c2\~I\’c3\’82\’c2\~mixed the dough\’c3\’82\’c2\~in the\’c3\’82\’c2\~bread machine on the dough cycle, then just left it in the machine\’c3\’82\’c2\~to rise all day.\’c3\’82\’c2\~ In the evening\’c3\’82\’c2\~I shaped the rolls, and in the morning I baked them. They were beautiful! they rose perfectly, the crust had that bubbly-sour-dough look, and they smelled grand, and I desperately wanted to try one – but I’d made them for church and I was supposed to bring 16, so I had to restrain myself. I was insanely proud of them. I even took pictures. Here’s one:\par

I had to wait until we got to church on Sunday to try one. I was hanging out by the bread-counter, as the food was being received during the Sunday school hour, and my sister-in-law encouraged me to go ahead and have on, as they had an inexplicably huge amount of bread that day. She didn’t have to twist my arm.\par

Well. It was good. It was exactly like I’d hoped it would be. Then Alice tried one at lunch time and asked me if she could have some of my starter. What joy! What bliss!! :-) \par

Sometimes I don’t think I have any hobbies, but I thought today, as I was making another batch of rolls (some to bring to Alice with the starter…), that that’s not really correct. Apparently I do have one. Yes, sourdough baking!\par

Unfortunately, I won’t be making any rolls quite like that in the near future. I discovered as I pulled the dough out of my bread machine this morning that the bread pan in the my bread machine is kaput. As in history. As in gone, dead, broken, busted, you name it. The bottom cracked away from the base and it is no longer usable. So sad. Now the question is: new bread machine, or just new bread pan for my current one?\par

  • Bread baking is a good hobby for generating husband support, nay, enthusiasm. Not many hobbies are as quick to engender such goodwill. :)

  • You should see if your library has Bernard Clayton’s complete book of breads; he has quite a sourdough section in it and it’s a very good book.\par

    I’m a little wary of eating something that’s sat out at room temperature so long — growing things — and Matt is downright opposed to it, so that’s not going to be my department at all. :) I like sourdough, making it is simply too akin to a science experiment for me. :) Matt doesn’t even like sourdough, so the effort wouldn’t be worth it, either. :)

    Yes, I was a little worried about making a bread with milk in it and letting it sit for 24 hours. But I figured that if the pioneers only raised bread using old-dough and sourdough starter methods and if they were unlikely to have used only water-based breads, that it was probably safe. And I’ve made two batches now, and so far, we’re fine! :-) \par
    I think the science experiment aspect of this is what attracts me most, actually! There are a gazillions different recipes for bread made with normal yeast but making your own bread completely from scratch using a home-grown starter is somehow…. exhilerating!
