Sourdough Trial

My sourdough starter has been working really well, lately! The sour-taste is quite strong, and I’ve discovered that I’ve not been adding enough salt. Once remedied, the salt definitely helps bring out the sourdough flavor. I’ve had 3 excellent (although not necessarily picture perfect) loves. Unfortunately, the other night I shaped the dough that had been rising all day, and baked in the next morning. I forgot to keep apart a piece of dough to be the starter for the next batch. So, hurrah for my late starter, thou wast tasty, and I shall miss thee.\par

I started another one right away, and made a sponge with it this morning. Tomorrow I’ll make dough, hopefully it will rise, and I will shape it tomorow night (being careful to reserve some “old dough”), and bake it Thursday\’c3\’82\’c2\~morning. I hope it works as well as the last one, although the first loaf is generally pretty listless, in my very limited experience. That’s the exciting thing about sourdough – you’re nurturing a culture of wild microscopic beasties and you never really know quite what to expect!
