More Sourdough

I finally got around to starting another sourdough starter this week. Of course, as timing goes, it wasn’t perfect, since I’ll be out of town next week so it’ll have to hibernate in the refrigerator while I’m gone, but I finally decided I had to start it NOW or I wouldn’t do it until spring when it would be too warm again!\par

It started, but it surely does take a long time – I started the starter on Tuesday, the sponge on Friday, and this morning I made the dough. Tonight I’ll shape it, and tomorrow (before church!) I’ll have to bake it. Next time I’ll already have the starter, so I’ll just have to do the sponge, dough, and rising. Hopefully my starter will get a little stronger so that each stage doesn’t take so many hours! My last starter did, but every starter is different, so there’s no telling!

    Hi LE! I was looking for something in the back of the fridge last week and I found our oooooooold starter—ewwwwww: it was gross. I threw it out, jar and all. Needless to say, we don’t use it very often. \par
    And yes, every starter seems to be different. Weird.
